In 2009, Lars Eriksen walked his grandfather's overgrown property and made a promise: to bring the land back to life. With just 80 acres, a second-hand tractor, and an unshakeable belief in organic farming, Lars planted his first crop of heritage wheat.
Word spread fast. Restaurants came calling. Markets beckoned. Within three years, Viking Harvest had grown to 150 acres, introduced vegetables and an orchard, and brought Lars's sister Ingrid on board to manage operations.
Today, 250+ acres, 18 full-time staff, and 1,200+ customers later โ the farm continues to evolve while never losing its founding spirit: honest work, honest food, and a deep respect for the earth.

We never compromise on our organic certification. No synthetic inputs, ever โ not even when it's harder or more expensive.
Soil health is everything. We rotate crops, plant cover crops in winter, and avoid all tillage that degrades soil structure.
Every person on this farm earns above-award wages. We believe fair food starts with fair treatment of the people who grow it.
We supply four local markets, donate surplus produce to food banks monthly, and host 2,000+ school visitors each year.
We partner with two universities to trial new varieties and monitor soil biology โ tradition guides us, science improves us.
All our packaging is either compostable, recycled cardboard, or reusable crates returned and washed between orders.
