How Viking Harvest Began

In 2009, Lars Eriksen walked his grandfather's overgrown property and made a promise: to bring the land back to life. With just 80 acres, a second-hand tractor, and an unshakeable belief in organic farming, Lars planted his first crop of heritage wheat.

Word spread fast. Restaurants came calling. Markets beckoned. Within three years, Viking Harvest had grown to 150 acres, introduced vegetables and an orchard, and brought Lars's sister Ingrid on board to manage operations.

Today, 250+ acres, 18 full-time staff, and 1,200+ customers later โ€” the farm continues to evolve while never losing its founding spirit: honest work, honest food, and a deep respect for the earth.

2009 โ€“ The Beginning

Lars plants 80 acres of heritage wheat on his grandfather's land. First harvest: 180 tonnes.

2011 โ€“ Organic Certification

Achieved ACO Certified Organic status after two years of transition. Premium buyers start calling.

2013 โ€“ Vegetables & Orchard

Expanded to 150 acres. Added market garden and planted 300 heritage fruit trees.

2016 โ€“ Farm-to-Door Launch

Launched weekly produce box delivery. 50 subscribers in week one. Now serving 1,200+.

2019 โ€“ Solar & Wind

480 solar panels and small turbine installed. Farm goes 100% renewable energy.

2022 โ€“ Carbon Neutral

Verified carbon-neutral status achieved. First farm in the region to reach this milestone.

2025 โ€“ 250 Acres & Beyond

Expanded to 250 acres, opened the farm kitchen cafรฉ, and launched the school education programme.
